I don’t know about you but I just love the idea that muffins for Monday breakfast.
Just because Monday.
When I see beautiful breakfast scenes on instagram, I imagine what my dream breakfast scene would be. It is like this, I wake up, do yoga, drink lots of water and make good coffee or tea for myself and grab this muffin, listening to Jazz. After that I would go a long walk with my dog on the beach.
Probably it will be possible after 20years lol
The reality is every morning is chaos. Especially Monday. I don’t know how many times I yell at older one, she loves to eat but just takes long long loooong time. Sometimes she takes for an hour… OMG. Plus her kinder requires lunch box only on Mondays(thank you very much). And the baby is now almost one, she throws all the food on the floor and tea all over it. Can you imaging? lol
I am literary running around with messy hair, yelling at my girl to hurry lol
Even though my Mondays are not fabulous looking, or maybe because of that, I love to bake muffins on Sunday for chaotic Monday.
This muffins are fluffy and moist.
You can add chocolate chips or chunks.
And also I used white sesame oil but you can use sunflower oil etc.
Of course you can use melted butter too.
I was actually worried about not creaming up butter with sugar as I added lots of bananas and honey, could be really heavy and soggy.
But this one! Do not worry!!
This is so fluffy and perfect ;)
Chocolate Banana Muffins
- 150 g flour
- 50 g almond powder
- 30 g light brown sugar
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 pinch salt
- 1 egg
- 100 ml white sesame oil
- 100 g honey
- 240 g bananas ripe, 3 middle bananas
- 65 g chocolate chunk or chocolate chips
- Preheat the oven to 180c. Prepare the muffin tin with muffin cups.
- Shift all the dry ingredients to a bowl.
- Add the egg and oil and honey then mix well until smooth.
- Beat in mushed bananas and chocolate.
- Spoon the batter into the prepared muffin cups and bake for 20minutes.
